Nestled in the Guatemalan highlands, Comunidad Candelaria is a proud community rooted in the legacy of the great Mayan civilization. Families here trace their heritage back over a century, when German immigrants joined local farmers in cultivating coffee. For generations, this community has worked the land together, producing rich chocolate-noted coffee that reflects their resilience and unity. In 2002, they regained legal rights to their land a turning point that renewed their vision of independence and prosperity. Known locally as "Cafe Chocolate" for its distinctive flavor profile, Candelaria is our pilot community and the heart of everything we do at Aviator Coffee. 

ASUVIM, which stands for "Comprehensive Association for a Better Life," was established in 2003 with the assistance of a non-governmental organization. Around the same time, a wet-processing facility was built for the community to serve as a hub for meetings, offices, ecotourism visits, and a small school for local children.
